Just find someone who knows what they're doing hop in your car and slide it once or twice. Watch their hands and see what they do differently. Driver mod>angle mod
15s are fine. Grabbing the ebrake would make you spin out harder. You're probably just giving it too much throttle with not enough counter steer. I slid my coupe for a year on 15s before I went up to 16s and never had an issue.
